Oysters McClellan
For the Crispy Grouper Bites:
- 12 Fresh shucked oysters
- 1/4 cup mince shallots
- 1/2 teaspoon minced garlic
- 1 cup shredded Gouda cheese
- 1/4 cup bacon bits
- 1 Tablespoon olive oil
- Pinch of table salt
Prepare the Dipping Sauce
Prep:
Mince shallot, about 1 large banana shallot, Mince garlic, about 1 large clove
Turn range on medium heat, put small skillet on range and let warm, about a minute ( heavily depending on gas vs electric range) In small skillet add olive oil, garlic, shallots,and a pinch of salt.
Sweat minced shallots and garlic together for about a minute. Add pinch of salt to garlic and shallots, pull off heat and let cool reserve for later.
With the large side of a cheese grater, grate the smoked Gouda cheese, reserve for later. Ready your bacon bits (homemade or store bought) your choice
Shuck:
Shuck all 12 oysters (neatly) discarding top of shell and inspect oyster bottom shell and meat to ensure free of shell or debris from shucking process.
Cook Oysters (your choice):
These oysters can be char grilled or oven baked ( if using a oven set oven to 375 degrees Fahrenheit)
Build & Final Bake:
On a small baking tray or plate/platter build your oysters.
Place 1/2 teaspoon of shallot and garlic mix onto each oyster, Place about 1 tablespoon of shredded Gouda cheese on top of each oyster, adding more if you desire. Tops each oyster with 1 teaspoon bacon bits.
Place oysters on a hot grill or preheated oven , cook oysters until cheese is fully melted and a bit bubbly around 11-14 minutes depending on cooking preference, 14 minutes being well done. ( if using oven a drip tray under oysters is highly recommended, in oven setting you may set the oysters on a bed of salt as to hold oysters even in the oven.)
