Dear Seafood Lovers,
Well, Lent is here and do I have some great seafood buys. As you all know by now, all our prices are wholesale to you. Our prices speak for themselves.
We are finally bringing in some fresh Amberjack, super for grilling. As always our heavy Salmon fillets are the best for grilling, poaching, and steaming. Just great! The oysters are fairly plump. Beginning in February, and continuing through March, they will have fattened up, and now the Select are truly select. We have received a shipment of Orange Roughy from New Zealand and if you have not tried Roughies, then you've missed the boat. They are more expensive then they should be, but I do have them.
There's one fillet that I recommend highly and that is Basa or Swai. It's white, flaky and no fishy smell. It is good, good, good, especially the price. It comes from Vietnam, and I promise you will love the fillet and the price at $3.99 per pound. We continue to have Maine lobsters, hard shells, which are the best, at $8.99 per pound. Crab meat has been extremely tight since the weather conditions have been terrible. Crabbers have small boats and the weather conditions affect them in the worst ways. But let's hope for the best to come.
The Vessel, Our Mother, arrived last week after a 42 day trip and brought in some excellent Royal Reds. Royal Reds are caught in very deep waters and are extremely delicate. Cooking time in water is 90 seconds. Bring the water to a hard boil and after rinsing the shrimp and seasoning the water to your liking, drop them in for 90 seconds. Remove them from the water and let them cool. I prefer to have cold tap water on hand to cool them off. I can't stress enough to do not overcook them. They will become mushy.
Well, that's about it. We have been serving the public good seafood for a long time, since 1931, but without loyal seafood lovers like yourselves, we wouldn't be here and we would miss each other. I do thank you for shopping at Joe Patti's.
